Another taste from a Brooklyn childhood: With fond memories of Mrs. Stahl’s Knishes of Brighton Beach Dough: 2 cups flour 2 tablespoons oil 1 teaspoon baking powder 2 eggs 1/2 teaspoon salt 4 tablespoons water
Filling: 3 tablespoons vegetable oil or chicken fat 2 cups plain mashed potatoes 2 cups finely chopped onions Salt and pepper to taste To make the dough, combine flour, baking powder, and salt in large bowl. Mix well and add a tablespoon of oil, eggs, and 2 tablespoons of water. Gradually mix wet ingredients to flour. Knead dough into a ball and place in an oiled bowl. Let stand covered for an hour.
Meanwhile, preheat oven to 350 degrees. Put 2 tablespoons of oil in skillet and cook onions until tender, add salt and pepper to taste. Mix filling ingredients in bowl. Roll out the dough to form a thin sheet. Use pieces of the dough to wrap balls of the filling mixture. Bake knishes for 40 minutes, until golden brown.
