BBQ Shrimp and Grits

Serves 6

Low Country Grits
1 cup heavy cream
1/4 pound butter
1 quart water
2 cups quick grits
Salt and pepper to taste
Heat cream and water to boil. Add butter, salt, and pepper. Slowly add grits and reduce heat. Cook 20 minutes being careful not to scorch the mixture.

Southern Comfort BBQ Sauce

1/4 pound bacon, diced
1/2 cup red onion, diced
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
2-14 ounce bottles Heinz ketchup
1/2 cup brown sugar
3 to 4 tablespoons Southern Comfort liquor
Salt and pepper to taste
Cook bacon until 3/4 done. Add onions and peppers; sauté’ until done. Flame with Southern Comfort. Adding remaining ingredients, simmer for 10 minutes, then cool. Will last under refrigeration for several weeks.


Shrimp
Sauté’, poach, or grill 2 pounds of shrimp. Place shrimp in heated barbeque sauce and simmer for 1 minute. Serve immediately with grits and, perhaps, an Amaretto Sour.
